  • 500g pork spare ribs
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 onion
  • 2 cloves garlic
  • 1 small knob of ginger
  • 3 tbsp fish sauce
  • 3 tbsp sugar
  • 2 tbsp rice vinegar
  • 2 tbsp tomato paste
  • 1 tbsp cooking oil
  • 1 tsp cornstarch (or tapioca starch)
  • Salt, pepper, dark soy sauce
  • Scallions, cilantro

Cooking Instructions for Sweet and Sour Spareribs

Step 1: Prepare the ingredients

Choose fresh spare ribs, then wash and cut them into bite-sized pieces. Marinate with 1 teaspoon of salt, 1/2 teaspoon of pepper, and 1 tablespoon of dark soy sauce for 20 minutes.

Bell peppers: Wash, deseed, and cut into 2cm squares.

Onion: Peel and cut into wedges.

Garlic and ginger: Finely chop.

Scallions and cilantro: Wash and chop for garnishing.

Step 2: Fry the spare ribs

Heat a pan with 2 tablespoons of cooking oil. Fry the spare ribs until golden brown on both sides (about 5-7 minutes). Remove from the pan and set aside.

Step 3: Prepare the sweet and sour sauce

In a small bowl, mix together:

3 tbsp fish sauce

3 tbsp sugar

2 tbsp rice vinegar

2 tbsp tomato paste

1/2 cup water

1 tsp cornstarch (mixed with 1 tbsp water to thicken)

Step 4: Stir-fry the spare ribs with vegetables

Using the same pan, add 1 tablespoon of cooking oil and sauté the garlic and ginger. Quickly stir-fry the bell peppers and onion over high heat for about 2 minutes to retain their crunch. Add the fried spare ribs to the pan and mix well.

Step 5: Finish the dish

Pour the prepared sweet and sour sauce into the pan and toss to coat the spare ribs and vegetables. Simmer over low heat for 3-5 minutes until the sauce thickens and clings to the spare ribs. Adjust seasoning if needed, then turn off the heat.

Step 6: Plate and serve

Place the sweet and sour spare ribs on a serving dish, sprinkling with scallions and cilantro. Enjoy this delicious dish with steamed white rice.
