How to Make Delicious Grilled Pork Ribs
Ingredients:
Pork ribs: 1kg (choose tender ribs with interspersed fat for tender and moist meat)
Garlic: 3 cloves, minced
Shallots: 2 bulbs, minced
Honey: 2 tablespoons
Fish sauce: 2 tablespoons
Hoisin sauce: 1 tablespoon
Chili sauce: 1 tablespoon (adjust to taste)
Vegetable oil: 1 tablespoon
Ground black pepper: 1/2 teaspoon
Salt: 1/2 teaspoon
Sugar: 1 tablespoon
Condensed milk: 1 tablespoon (for color and aroma)

Instructions:
Step 1: Prepare the ribs
Rinse the pork ribs with diluted salt water to remove any unpleasant odor, then pat them dry. Cut the ribs into bite-sized pieces (approximately 5-7cm each).
Step 2: Marinate the ribs
In a large bowl, combine garlic, shallots, honey, fish sauce, hoisin sauce, chili sauce, vegetable oil, ground black pepper, salt, sugar, and condensed milk to create a marinade. Mix well.
Add the ribs to the bowl and toss to coat evenly. Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours (preferably overnight) to allow the flavors to penetrate the meat.
Step 3: Grill the ribs
For oven baking: Preheat your oven to 200°C for 10 minutes. Line a baking tray with aluminum foil and place the ribs on it. Keep the marinade aside for basting during grilling.
Grill the ribs at 200°C for 30 minutes. After 15 minutes, flip the ribs and brush the marinade on the surface to prevent drying and enhance the color. Increase the temperature to 220°C for the last 5-7 minutes to give the ribs a crispy and golden finish.
For charcoal grilling: Prepare a charcoal grill with red-hot coals and place a grill rack over it.
Arrange the ribs on the rack and grill for about 7-10 minutes on each side. Occasionally brush the marinade on the ribs to add shine and flavor. Flip the ribs frequently to prevent burning.

Step 4: Serve and enjoy
Once the ribs are golden and emit a mouthwatering aroma, transfer them to a serving plate. Garnish with chopped scallions or coriander leaves for a pop of color.
Serve with rice, bread, or salad according to your preference. Enhance the flavor by dipping the ribs in a mixture of chili, salt, and lime or additional chili sauce.
