– 400g pork ribs
– 3 stalks lemongrass
– 1 bird’s eye chili
– 3 cloves garlic

Preparation of Spicy Pork Ribs with Lemongrass
Step 1: Marinate the pork ribsTo get rid of the pork ribs’ unpleasant smell, soak them in diluted saltwater for 10 minutes, then rinse them thoroughly with water several times. Cut the ribs into bite-sized pieces and let them dry.
In a bowl, combine the ribs with 1 tablespoon of fish sauce, 1/2 tablespoon of seasoning, 1/2 tablespoon of seasoning powder, and 1/4 tablespoon of pepper. Mix well and let the ribs marinate for about 15 minutes.
After that, add 1 tablespoon of crispy flour and mix well.
Step 2: Prepare the other ingredients
Peel and slice the lemongrass, shallots, and garlic. Deseed the chili and chop it finely. Put all the sliced ingredients into a blender and blend until smooth.
Note: If you don’t have a blender, you can finely chop or pound the ingredients using a mortar and pestle.
Step 3: Fry the ribsHeat 3 tablespoons of oil in a pan over medium heat. Once the oil is hot, fry the marinated pork ribs until they are cooked through and golden brown on both sides. Remove the ribs from the oil and drain on a paper towel.
Step 4: Stir-fry the ribs
Add 1 tablespoon of oil to the pan. When the oil is hot, add the blended mixture and sauté until fragrant. Then, pour in 3 tablespoons of water, 1/2 tablespoon of seasoning, 1/2 tablespoon of seasoning powder, and 1/2 tablespoon of sugar. Give it a good mix. Finally, add the fried ribs and stir-fry until the sauce thickens and reduces. Adjust the seasoning to your taste and turn off the heat.
