How to Make Stir-fried Water Spinach with Garlic
Step 1: Prepare the ingredients
Carefully pick and clean the water spinach, removing any yellow or wilted leaves. Cut the stems into approximately 10cm lengths, discarding any damaged leaves and old stems. Rinse thoroughly and set aside to drain. For the garlic, peel, clean, and finely chop after crushing.
Step 2: Blanch the water spinach
Briefly blanch the water spinach in boiling water with a pinch of salt, then quickly transfer it to a bowl of iced water. This process helps retain the crispness and vibrant green color of the vegetable.
Step 3: Stir-fry the water spinach
Heat up 3-4 tablespoons of cooking oil in a wok or a large pan. Add the chopped garlic and sauté until fragrant. Toss in the water spinach and stir-fry evenly. Season with fish sauce, seasoning powder, and sugar to taste. Turn off the heat and serve.
