How to Stir-fry Bamboo Shoots with Frog
Step 1: Prepare the frog meat
Wash the bamboo shoots thoroughly, then blanch them in boiling water for about 3 minutes. Soak them in cold water for 2 minutes to retain their crispness. Next, cut the bamboo shoots lengthwise into small, bite-sized pieces.
Clean the horn peppers, and slice them. Rinse the betel leaves, perilla leaves, and sawtooth herb, then use scissors to cut them into small pieces.
Wash the shallots and peel and mince the garlic.
Step 2: Marinate and fry the frog meat
In a large bowl, combine the frog meat with 1/2 teaspoon of salt and 1/3 teaspoon of MSG. Mix well and let it sit for about 5 minutes to allow the meat to absorb the flavors.
Heat a pan over the stove and add 100ml of cooking oil. Once the oil is hot, fry the marinated frog meat in the oil for about 4 minutes over high heat until it is partially cooked. Then, remove it from the oil.
Step 3: Stir-fry the dish
Add 20ml of cooking oil to the pan and wait until it is hot. Put in the minced garlic and bamboo shoots, stir-frying evenly over high heat for about 2 minutes. Then, add the partially cooked frog and sliced horn peppers.
Continue stir-frying the mixture for another 2 minutes. After that, season it with 1 teaspoon of sugar, 1/2 tablespoon of fish sauce, 1/2 tablespoon of seasoning powder, 1 tablespoon of dark soy sauce, and 1/2 teaspoon of salt.
Stir everything together for about 1 minute, and then add the betel leaves, perilla leaves, shallots, and sawtooth herb to the pan. Keep stir-frying for an additional minute before adding 1 teaspoon of turmeric powder and 1/2 teaspoon of ground pepper. Make sure to stir evenly during this process, and then taste and adjust the seasoning as needed before turning off the heat.
Step 4: The Final Product
The stir-fried bamboo shoots with frog will have an enticing color and aroma that will tantalize your taste buds.
The frog meat is slightly chewy and sweet, perfectly complemented by the crisp and mildly bitter bamboo shoots. The dish is seasoned to perfection, and your family is sure to love it!
