Preparation:
– Cardboard box: Acts as a container to shield the sweet potatoes from light and moisture.
– Newspaper: Absorbs excess moisture during storage.
– Baking soda: A natural dehumidifier, keeping the sweet potatoes dry and airy.
Instructions:
Pre-treating the sweet potatoes before storage:
– Upon purchasing sweet potatoes, if they appear to have damp soil on the surface, refrain from immediately placing them in the storage box. This moisture can cause the sweet potatoes to spoil or sprout.
– Allow the sweet potatoes to air dry in a well-ventilated area for approximately one day until their surfaces are completely dry.
– If sun-drying the sweet potatoes, be mindful to only do so lightly to dry the outer skin. Avoid prolonged exposure to direct sunlight as it can cause the sweet potatoes to lose moisture, leading to wilting and a decline in quality.
Preparing the storage box:
– Select a cardboard box that is appropriately sized for the quantity of sweet potatoes you intend to store. The box will help block light and maintain a stable environment inside.
– Line the bottom of the box with a layer of newspaper to absorb moisture and prevent direct contact between the sweet potatoes and the box’s surface.
Arranging the sweet potatoes and baking soda:
– Take a small amount of baking soda, wrap it tightly in toilet paper or tissue paper. This packet will function as a moisture-absorbing “filter” within the box.
– Place a layer of sweet potatoes on top of the newspaper lining. Add another layer of newspaper, then position the baking soda packet, followed by another layer of sweet potatoes.
– Repeat this process until all sweet potatoes are arranged. Finally, cover the top layer with a last layer of newspaper.
Storing the box of sweet potatoes:
– Seal the cardboard box to prevent the sweet potatoes from being exposed to outside air.
– Store the box in a dry, cool, and well-ventilated area, away from direct sunlight.
– Importantly, do not place the box directly on the floor. Instead, elevate it on a brick or a stand to minimize moisture absorption from the ground, reducing the chances of sprouting.
Important notes on storing sweet potatoes:
– Ensure the sweet potatoes are entirely dry before storage to prevent rot or mold.
– Use baking soda sparingly: It effectively absorbs moisture, helping to maintain a dry environment in the box.
– Avoid placing the box directly on the ground: This reduces the risk of moisture absorption, sprouting, and spoilage.
With this storage method, you can keep sweet potatoes for up to 6 months without sprouting or loss of quality. Moreover, extended storage can even enhance their sweetness and aroma when cooked.
