Ingredients

Pork belly: 500g

Chicken or quail eggs: 6-8 eggs

Fresh coconut water: 1 liter

Shallots: 3 bulbs, minced

Garlic: 2 cloves, minced

Fish sauce: 3 tablespoons

Sugar: 2 tablespoons

Salt: 1/2 teaspoon

Ground pepper: 1/2 teaspoon

Cooking oil: 2 tablespoons

Scallions: a few sprigs

Chili peppers: 1-2 peppers

Cooking Instructions

Step 1: Prepare the ingredients

Pork belly: Clean and remove any hair from the skin. Cut into bite-sized cubes (approx. 3-4 cm). Marinate the pork with 1 tablespoon of fish sauce, 1/2 teaspoon of salt, 1/2 teaspoon of ground pepper, and 1 tablespoon of minced shallots. Set aside for 30 minutes to absorb the flavors.

Eggs: Boil the chicken or quail eggs, peel, and gently rinse the shells off. Set aside.

Shallots and garlic: Mince finely.

Step 2: Make the caramel sauce

In a small saucepan, combine 2 tablespoons of sugar with 1 tablespoon of water. Cook over low heat, stirring continuously, until the sugar dissolves and turns into a dark amber color (be careful not to burn it). Remove from heat and let it cool down slightly. Add 1 tablespoon of water to dilute the caramel sauce.

Step 3: Sauté the pork

Heat 2 tablespoons of cooking oil in a large pot. Fry the minced shallots and garlic until fragrant. Add the marinated pork belly and sauté over medium heat for about 5-7 minutes to render some of the fat and enhance the flavor.

Step 4: Braise the pork

Pour the caramel sauce into the pot with the pork and mix well to coat the meat. Add the fresh coconut water, 2 tablespoons of fish sauce, and 1 tablespoon of sugar. Bring it to a boil, then reduce the heat to low.

Add the boiled eggs to the pot, ensuring that the liquid covers the meat and eggs. If needed, add a little water. Simmer on low heat for 1.5-2 hours, occasionally stirring gently to allow the flavors to infuse the meat and eggs. Adjust seasoning to taste.

Step 5: Finish and serve

When the pork is tender, and the sauce has reduced and turned a beautiful brown color, remove from heat. Garnish with chopped scallions and ground pepper to taste. Add sliced chili peppers if you like it spicy.
