Spicy Sichuan Tofu Recipe (Serves 3-4)

Ingredients:

  • 1 package soft tofu
  • 200 grams minced pork
  • 50-100 grams wood ear or shiitake mushrooms
  • 20 grams scallions
  • 20 grams garlic
  • 2 tablespoons chili bean paste
  • 1 tablespoon sesame oil
  • 2 tablespoons dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon seasoning powder
  • 1 tablespoon cooking oil

Instructions:

Step 1: Prepare the Ingredients

Gently rinse the soft tofu under running water without breaking it. Cut the tofu into bite-sized cubes. Soak the mushrooms in a dilute salt water solution for 5-10 minutes, then rinse with warm water and chop finely.

Finely chop the scallions and garlic after rinsing them in water. Season the minced pork with ½ teaspoon of seasoning powder and a little chopped scallion for 15-20 minutes.

Step 2: Make the Sichuan Sauce

Heat a pan and add 1 tablespoon of cooking oil. When the oil is hot, add the chopped scallions and garlic and sauté until golden. Add the marinated minced pork and cook until it changes color.

Add the chopped mushrooms and season with 2 tablespoons of chili bean paste, 1 tablespoon of dark soy sauce, 1 tablespoon of light soy sauce, and a little sugar to taste.

Step 3: Stir-fry the Tofu with the Sichuan Sauce

When the pork is nearly cooked and has taken on the characteristic color of Sichuan tofu, add the tofu cubes to the pan. Gently toss and stir-fry for 3-5 minutes to allow the tofu to absorb the flavors.

Just before turning off the heat, add 1 tablespoon of sesame oil and transfer the dish to a serving plate.

Garnish with chopped scallions for a more appealing presentation.

Step 4: Serve

Despite its simplicity, this dish boasts a vibrant presentation with the red chili bean paste, white tofu, and flavorful pork. It is a delightful blend of colors and textures.
