Banana Pudding
Ingredients
– 500g ripe bananas (preferably slightly under-ripe)
– 400ml water
– 400ml coconut milk
– 50g tapioca pearls (small round balls, available at most Asian grocery stores)
– 50g potato starch (long, translucent strands, also found at Asian markets; optional but adds a nice texture)
– 120g sugar
– 1 teaspoon salt
– 2 stalks pandan leaves (optional but adds a wonderful aroma)
– Roasted peanuts, crushed
Instructions
1. Soak the potato starch and tapioca pearls in warm water for 2 hours to soften them.
2. Slice the bananas into rounds and toss them with a pinch of salt and a tablespoon of sugar. Let them sit for 15 minutes to draw out any excess moisture.
3. In a saucepan, bring the water and pandan leaves to a boil. Add the coconut milk, bananas, and sugar, and simmer for 5 minutes. Once the bananas are partially cooked (about 70% done), drain the starch and pearls, and add them to the pot. Continue cooking for 10 minutes, then remove from the heat.
4. In a separate pan, roast the peanuts until golden. Crush them lightly, leaving some texture, and sprinkle over the pudding. If desired, you can also add some roasted sesame seeds for extra flavor.
