1. Boiling vegetables with the lid on:
Bring a pot of water to a boil, add a pinch of salt to the water. Quickly add the vegetables, press them down to ensure they are fully submerged, then cover the pot and let it boil vigorously for 2 minutes. Open the lid and try a piece of vegetable to see if it’s tender and crisp. Remove the vegetables from the pot and let them cool (if you prefer glossy vegetables, add a few drops of cooking oil before removing the vegetables).
2. Boiling vegetables without the lid:
Bring a pot of water to a boil, add a pinch of salt to the water. Quickly add the vegetables and let them boil vigorously, occasionally stirring the vegetables to ensure even cooking. After 2 minutes, try a piece of vegetable to check if it’s tender and crisp, then remove the vegetables from the pot and let them cool (if you prefer glossy vegetables, you can add a little cooking oil as mentioned above).
Whether you boil vegetables with or without the lid doesn’t matter, as long as you use plenty of water, add some salt, and cook over high heat, the vegetables will turn out crisp and vibrant.
3. Stir-frying vegetables to retain vibrant green color and crispness
– Finely chop some garlic and sauté it in oil until fragrant, then set aside the fried garlic.
– Add some water to the pan and cook the vegetables until tender.
– Season with spices, and add the previously fried garlic and toss well.
– Transfer the cooked vegetables to a dish and sprinkle the fried garlic on top.
– This stir-frying method can be applied to all types of vegetables.
