Step 1: First, prepare the ingredients with crushed lemongrass and crushed ginger in a pot of boiling water. Put the offal into the pot, ensuring it is submerged in the water. Boil for about 1.5 minutes.
During this process, you need to prepare a cool container with ice, squeeze some lime juice into it. When the offal has been boiled for 2 minutes, remove it and immediately immerse it in the container with ice water for about 1 minute to cool down. The cooling process helps to make the offal crispier. The lime juice helps the offal to become white and fragrant.
Continue to bring the pot of water to a boil, put the offal in for a second boil over high heat for about a minute. Then, scoop it out and immerse it in the container with ice water. After that, you can take out the offal, cut it into bite-sized pieces of about 5 cm and arrange it on a plate for serving.
