Originating from the northwest region of France, crepe cake has spread throughout the country and gained popularity in other nations such as Belgium, Switzerland, Canada, and Brazil. Now, it can be found worldwide, including in Vietnam. To make crepe cakes conveniently, they are usually prepared on a wide, flat pan.

In Vietnam, a dedicated crepe pan is not necessary. A non-stick pan can be used to create thin, smooth, and delicious crepe cakes. Traditionally, the mixture is poured into the pan and fried over low heat. However, a unique method of making crepe cakes using the bottom of the pan has gained attention. This method yields perfectly cooked and evenly spread crepes, even for first-time cooks.

To make crepes using the bottom of the pan, you will need the following ingredients:

  • 2 eggs
  • 180ml fresh unsweetened milk
  • 120ml water
  • 120g all-purpose flour
  • 45g unsalted butter
  • 1g salt
  • A small amount of butter for greasing the pan

The steps for making crepes using the bottom of the pan are as follows:

  1. Melt 45g of butter in the microwave or by steam. Mix it with eggs, milk, and water until well combined.
  2. Sift flour into the mixture and mix well to blend the ingredients.
  3. Refrigerate the mixture for about 1 hour.
  4. Turn on the stove and heat the non-stick pan. Instead of using the inside of the pan, flip it upside down so that the inside comes into contact with the fire and the bottom faces upwards.
  5. Grease the bottom of the pan with a thin layer of butter to prevent sticking. Dip it lightly into a container of flour, allowing a thin layer to stick. Avoid using too much flour as it will melt.

  7. Place the inside of the pan on the fire and let the cake cook. It will naturally peel off when cooked. Flip the pan upside down, and the cake will easily fall out.
