In the summer, snail dishes are very popular. Besides boiled snails and stir-fried snails, snails can also be made into sausage, cooked with noodles, or stewed with green bananas. Snails are rich in calcium and essential nutrients that help cool down and detoxify the body. Although delicious and nutritious, snails must be processed properly, otherwise the dirt and soil in them can be harmful to your health.
Most people wash snails and soak them in water with rice and a few slices of chili pepper. This method is not necessarily wrong, but it will not be able to completely clean the dirt inside the snails.
So is there a way to clean snails “spotless”? According to an experienced chef, cleaning snails is not difficult but few people know how to do it. To help the snails release the dirt and parasites inside them as quickly as possible, you need to use sesame oil and white vinegar. How to clean snails quickly and thoroughly
1. After buying snails, put them in a strainer and rinse them with clean water several times to remove some of the dirt on the surface of the snails.
2. Use a brush or iron scrub to continuously scrub each snail. This will help remove all the mud and moss stuck on the shell that cannot be removed completely by rinsing with regular water.
3. After the first two steps, you will see that the snails are almost clean, but there is still a lot of dirt inside the hard shell. To remove them, you must soak the snails in warm water from 36-40 degrees Celsius. The warm environment will help the snails release the dirt and parasites faster.
4. Add 1 teaspoon of salt, 1 teaspoon of white vinegar, and 5-10 drops of sesame oil to the bowl of snails. These spices will speed up the process of releasing the snail’s dirt and make them cleaner. Remember to use your hands to stir the snails 2-3 times, then soak them for about 60 minutes.
5. After this time, the snails have almost released all the dirt, debris, and any parasites. Take the snails out and you will easily see a lot of dirt and parasitic worms (if any) at the bottom of the bowl. After soaking the snails, rinse them 2-3 times with water and they are ready to be cooked.

Simmer the snails over medium heat, stirring occasionally to let the snails absorb the flavors. After about 20 minutes, the snails are cooked and you can turn off the heat.
Note: For stir-fried snails, you should remove the sharp part of the shell to make it easier to eat.
