If you can’t go grocery shopping frequently during this pandemic, you can still store these spices and herbs for extended periods with the following methods:
Scallions and Cilantro
After purchasing scallions and cilantro from the market or supermarket, wash them thoroughly and let them air dry completely using a clean kitchen towel or paper towel. Then, cut off the roots of the scallions and chop or mince them to your desired size. Place the scallions into a freezer bag inside a vegetable storage container and store them in your freezer.

When using scallions and cilantro in your cooking, simply take them out of the freezer and add them directly to your dish while still frozen. Avoid defrosting them, as they will become limp and discolored.
Ginger
During this complex pandemic, ginger is not just a cooking ingredient but also a medicinal herb. It can be used for steam inhalation if you unfortunately contract COVID-19. Ginger helps keep the body warm and eliminates toxins. However, ginger cannot be stored for long, as it will dry out and turn dark.

To preserve ginger for an extended period, it’s best to store it in your freezer. Use a knife or spoon to scrape off the ginger’s skin, then cut it into slices. Place the ginger slices into a freezer bag, squeeze out the air, seal the bag, and store it in the freezer.
Chili Peppers
Chili peppers are a staple in many households’ kitchens. However, storing them in the freezer or refrigerator is not optimal. It’s better to wash them, let them air dry, and then dehydrate them using a microwave oven or an air fryer. Alternatively, you can sun-dry the chili peppers for one to two days until they are completely dry. Once dry, tie them up in a nylon bag and store them in a dry place.
