How to choose pig intestines

To buy good pig intestines, it is best to go to the market early in the morning.

Usually, a piece of pig intestines weighs from 600 – 800g. Therefore, you should choose intestines that are firm to the touch but not too large. This type will be thicker compared to larger intestines.

In addition, the color of pig intestines is also important. Choose intestines that have a uniform white color, without any purple spots, ulcers, puffiness, or gas.

Many people hesitate to buy pig intestines because they are difficult to prepare. Let’s try applying the following methods to clean the intestines and create many delicious and irresistible dishes.

Cleaning pig intestines with flour

First, you need to prepare the following ingredients:

Ingredients:

• Pig intestines
• Vinegar
• Flour
• Salt

Instructions:

Step 1: Rinse the pig intestines to remove any external impurities, then use a knife to remove any excess fat around. Then turn the intestines inside out and continue to cut out any internal impurities. Use a knife to scrape off the yellowish substance on the surface of the intestines.

Step 2: Turn the outside of the intestines inside out and place them in a pot or basin. Then sprinkle a sufficient amount of flour on the intestines and rub them evenly. The flour, with its tiny particles, can clean the slimy substances of the intestines.

Step 3: Turn the inside of the intestines outside and sprinkle flour on them, then continue to knead them. Then add 3 tablespoons of vinegar and 1 tablespoon of salt, knead them and let them sit for 1 – 2 minutes.

Step 4: Rinse the intestines with water several times and they are clean.

Cleaning pig intestines with salt

In addition to flour, you can also use the following method to clean pig intestines:

Ingredients:

• Pig intestines: 1 piece
• 100 grams of coarse salt or normal table salt.
• 2 lemons.
• Ginger wine (if available).
• 100ml of vinegar.

Instructions:

Step 1: After removing impurities and excess fat, turn the intestines inside out and rinse them directly with water.

Step 2: Next, add salt and vigorously rub to remove all the mucus. Remember to squeeze and clean all the folds. Then use a knife to scrape off any remaining impurities on the intestines and rinse them clean with water.

Step 3: Squeeze some pieces of lemon and rub them with the intestines for 10 minutes, then rinse them with water.

Step 4: Boil the pig intestines in boiling water with salt, vinegar, and ginger wine (if available).

Step 5: Scrape off the white membranes around the intestines.

Step 6: Rinse the intestines thoroughly and let them drain.
