Whipping cream is a popular ingredient in desserts, especially in baking. Typically, it is in liquid form, opaque white like milk but thicker due to its high-fat content (ranging from 10-45%). However, when whipped, it transforms into a solid, smooth texture and is commonly used to frost cakes or pipe decorations. Additionally, whipped cream can help create light and airy mousse.

1Ingredients for Whipping Cream

  • 120ml of whipping cream with at least 30% fat (higher fat content results in firmer and stiffer cream)
  • 10 – 15g of granulated sugar (adjust to taste)
  • Ice (optional)

2How to Whip Cream

Step 1 Prepare the Ingredients

Chill the whisk and mixing bowl (metal) in the freezer for about 15-20 minutes, setting the temperature to the highest level.

As for the whipping cream, place it in the fridge for about 10 minutes to make it easier to whip (be careful not to freeze it). Then, add ice to a large bowl, place the mixing bowl on top, and add the whipping cream and sugar. Mix well.

Step 2 Whip the Cream

Use an electric mixer to whip the cream. Start at a slow speed and then gradually increase it; when the cream starts to thicken and form ribbons, lower the speed. If you don’t, the cream may separate. Finally, when the cream is smooth and stiff (when tilting or inverting the bowl, the cream doesn’t move), it’s ready!

If you don’t have a mixer, you can use a spring whisk (coil shape) and whisk by hand. When whisking, move quickly and horizontally (not in a circular motion). Similar to the mixer, when the cream starts to thicken, slow down until it becomes stiff and doesn’t move when tilting or inverting the bowl.

The whipped cream will taste sweet, rich, soft, and melt-in-your-mouth. It will be stiff and smooth without any separation or graininess. In addition to baking, this cream can also be used as a “prop” to decorate and enhance the appeal of beverages.
