A unique presentation of ‘banh uot’, a type of Vietnamese rice noodle dish, served in stacks of plates as you eat.

Why is this dish known as the “most extravagant dish in Vietnam”? When a customer orders, the server prepares a metal tray with about 10 layers. The noodles are freshly cooked at the open kitchen counter and then stacked on plates and placed on the tray. As you eat, the server brings more stacks to your table.

Usually, a customer eats about 10-15 plates, and those with a bigger appetite can finish 20-25 plates. After the meal, each customer is left with a tall stack of plates, and it becomes a fun game to count how many plates they’ve eaten.

A delicious and diverse dish with various toppings

A set of 10 plates of ‘banh uot’ includes thin rice noodles, each spread with scallion oil and dried shrimp. The texture of the noodles is similar to steamed rice rolls but slightly chewier, making it easier to roll without tearing. The main topping plate includes rice cakes, sour pork sausage, pork pie, cinnamon sausage, and roasted pork, all sliced into thin, flat pieces. It is served with various herbs such as basil, cucumber, mango, and pickled vegetables to balance the flavors.

When eating, customers pick their choice of toppings, roll them up in the noodle, and dip it in the sauce. The restaurant offers four types of dipping sauces: sweet and sour fish sauce, coconut fish sauce, tamarind fish sauce, and fermented fish sauce. The chewy noodles, savory fillings, and balanced dipping sauces make for a delicious and addictive combination. Each person can easily eat at least 5-7 rolls.

A unique dining experience that has captured the curiosity of many

For two people, a set costs around 150,000 VND, and additional plates of ‘banh uot’ are 2,500 VND each. The other toppings can also be purchased separately. In general, 150,000 – 200,000 VND per two people is quite filling.

The unique way of serving ‘banh uot’ in stacks of plates has not only made it a familiar dish for locals but also attracted the curiosity and interest of many tourists. This specialty, which originated in the Central Highlands, is famous in Buon Ma Thuot and has become popular in Dalat (Lam Dong), Ho Chi Minh City, Nha Trang (Khanh Hoa), and some southern provinces.

The dipping sauce is the key to this delicious dish

In Hanoi, some restaurants on Lo Duc Street (Hai Ba Trung District) and Nguyen Khang Street (Cau Giay District) have brought the flavors of Ban Me to the capital. The Hanoi version of ‘banh uot’ stacks retains the original Buon Ma Thuot style but adds local specialties like rice cakes.

Many customers have given this dish a 5-star rating, and it is a favorite among tourists visiting the city known for its coffee. This unique dining experience will surely leave a lasting impression, so don’t miss out on trying it.
