How to Choose and Cook Delicious Steak
The key to a great steak dinner starts with choosing the right cut of meat. Opt for a fresh, bright red piece of beef rather than a darker shade. Select smaller, tender cuts and look for fine grain and good elasticity when pressing the meat with your finger.
The Perfect Steak Recipe
Step 1: Prepare the Steak
Use a specialized meat mallet to tenderize the steak, then marinate it in a mixture of half a teaspoon of ground pepper, one clove of minced garlic, one tablespoon of cooking wine, one tablespoon of vegetable oil, and half a tablespoon of tapioca starch. This combination will ensure a mouthwatering, tender steak.

Step 2: Cut and Boil the Potatoes
Cut the potatoes into finger-sized pieces. Boil them in a pot of water over high heat for 10-15 minutes. For crispier potatoes, add a pinch of salt and white vinegar to the water. This will prevent discoloration and enhance their flavor. For the tomatoes, simply wash and dice three tomatoes, and peel and dice the onion.
Peel half a clove of garlic and grate half a thumb-sized piece of ginger. Finely chop these and add to the diced vegetables. Wash the cucumber, peel, and slice it into thin, bite-sized pieces.

Step 3: Fry the Steak
Heat a pan over medium heat and add a tablespoon of vegetable oil. Once the pan is slightly smoky, add the steak and another tablespoon of oil. Fry each side of the steak for about five minutes for a medium-rare finish. Avoid overcooking the meat. Once done, remove the steak from the pan and drizzle with a tablespoon of lemon juice.
Step 4: Make the Sauce
In a bowl, mix half a teaspoon of ground pepper, one tablespoon of cooking wine, two tablespoons of soy sauce, half a tablespoon of tapioca starch, one tablespoon of vinegar, half a tablespoon of sugar, one tablespoon of white wine, a few leaves of Mexican marigold, and three tablespoons of water. Stir well to combine.
In a separate pan, heat a tablespoon of unsalted butter over medium heat. Add the garlic and ginger and sauté for 2-3 minutes until fragrant. Toss in the diced tomatoes and onions and cook until tender. Add the sauce mixture and adjust the seasoning to taste.
Step 5: Plate and Serve
Arrange the perfectly cooked steak on a plate alongside the fried potatoes. Drizzle the sauce over the steak, sprinkle with ground pepper, and enjoy!
