Main Ingredients (serves 3):

– 500g duck (older ducks such as free-range or Muscovy ducks are preferred)

– 250ml beer

– Green chili pepper: 50g, red chili pepper: 80g

– Garlic, ginger, scallions

– Seasonings: soy sauce, dark soy sauce, vinegar, salt, cinnamon, star anise, cooking oil

Instructions:

Step 1: Preparation

Clean the duck thoroughly. You can use ginger to rub on the duck’s surface to reduce any unpleasant odor. Then, rinse and cut the duck into bite-sized pieces. Peel and crush the garlic. Peel and finely chop the ginger.

Step 2: Sauté the Duck

In a pan, heat some oil and add the ginger and garlic. Sauté until fragrant, then add the duck pieces and continue to sauté with soy sauce and dark soy sauce.

Add cinnamon and star anise to the pan, then pour in the beer. Simmer over low heat for about 25-30 minutes or until the duck is tender.

Add the chili peppers and season with salt and vinegar to taste. Continue cooking until the sauce thickens.
