Ingredients

  • 1kg pork
  • 2 garlic bulbs
  • 2 lemongrass stalks
  • 2 chili peppers
  • Fermented tofu: 2 cubes (use only the solid part)
  • Seasonings: salt, sugar, fish sauce

Preparation

Step 1: Prepare the ingredients

After purchasing the pork, rinse it thoroughly with salted water. Then, cut it into pieces 3cm long and about 1cm thick, or leave it as a large piece, according to your preference. For the best results, choose pork shoulder or belly for grilling.

Peel and mince the garlic. Peel and crush the ginger, and finely chop the chili. Trim the tough outer leaves of the lemongrass, cut off the root end, and then crush and mince it.

Combine the garlic, ginger, and lemongrass in a bowl. Pound these ingredients into a paste. Add 50ml of water to the paste and let it infuse for 30 minutes. Then, strain the mixture through a fine-mesh sieve to collect the liquid.

Step 2: Marinate the pork

Place the pork in a large bowl. Add 1 teaspoon of sugar, 1/2 teaspoon of pepper, 1 teaspoon of MSG, 2 cubes of fermented tofu (use only the solid part), 1 tablespoon of sesame oil, and 1 teaspoon of five-spice powder.

To enhance the natural sweetness and tenderness of the meat, add 3 tablespoons of unsweetened condensed milk. Include the chopped chili and the strained liquid from the garlic-ginger-lemongrass mixture.

Finally, put on some gloves and mix everything together thoroughly. Wrap the marinated pork with plastic wrap and refrigerate it for 2-3 hours before grilling. For even more delicious results, marinate the pork for a full day.
