First, ensure that the ingredients you choose are fresh and of good quality. Both the bones and the meat should be fresh, not old. Prior to simmering the bones, it’s important to blanch them to remove any undesirable bone odor, which will also help enhance the flavor of the broth.
When making broth, you should also consider whether you will consume the bones afterwards or discard them. If you plan to consume the simmered bones, the simmering time must be reduced. The key is to pay attention to the heat and the pot used to simmer the bones. The pot should have a thick base and be large enough to fully submerge the amount of bones. Once the broth pot starts to boil, reduce the heat and do not cover it. During the simmering process, continuously skim off any floating impurities.
