Once the water is boiling, add the meat for approximately 2 to 3 minutes. Then, turn off the heat, remove the meat, and rinse it with cold water. Discard this water and boil a new pot of fresh water. In this new pot of water, add 2 crushed shallots.

While boiling the meat, regularly skim off any foam to ensure the meat remains clear and odor-free. To check if the meat is fully cooked, use a fork to pierce it. If the meat releases pink water, let it boil for an additional 5 minutes; otherwise, it can be removed. However, avoid using the fork too much to prevent the sweet juices of the meat from escaping, preserving its delicious flavor.

Take the cooked meat out and place it in a cold water bath, then immediately remove it. Instead of rushing to cut the meat into thin slices, allow it to “rest” for approximately 5 minutes. This will make slicing easier and result in firmer, more tender meat. After 5 minutes, slice the meat into thin slices for serving.

When the water is boiling, the heart will be fully cooked in approximately 2 minutes. Once the heart is cooked, take it out and soak it in a bowl of cold water with squeezed lemon juice to achieve its desired white, crispy texture.
