King crouching vegetable and shrimp salad: 

Ingredients:

200g fresh and delicious shrimp.

Cilantro, mint, roasted peanuts, toasted golden onions.

100g dried king crouching vegetables.

1 carrot.

Yellow bell pepper, red bell pepper.

Shrimp chips: ½ small bag.

1 chili pepper.

Seasonings: salt, pepper, sugar, good fish sauce, nurtured vinegar.

Purple onion, garlic: 1 of each.

Fresh lime: 3 fruits.

Soaking dried king crouching vegetables

Instructions:

Soak the dried king crouching vegetables in clean water for about 3-4 hours to make them soften and expand, then use scissors to cut into bite-sized pieces.

To clean them, put the soaked king crouching vegetables in a bowl of water with the juice of 1 lime for about 15 minutes, then remove and drain the water, set aside, do not squeeze as it will cause the vegetables to break.

Peel off the heads and tails of the shrimp, then remove the black vein on the shrimp. Marinate the shrimp with 1 teaspoon of fish sauce, 1/2 teaspoon of ground pepper. Boil the shrimp in boiling water with lemongrass for about 5 minutes to remove the fishy smell and cook the shrimp until they turn bright red.

Peel the outer skin of the carrot, julienne the carrot, and soak it in a bowl of 2 tablespoons of vinegar and 1 tablespoon of sugar to make the carrot crunchy.

Rinse the bell peppers, cut them into strips, and soak them in ice water to make them crispy.

Mix the salad dressing: In a pot, add 2 tablespoons of fish sauce, then add 2 tablespoons of fine sugar and 2 tablespoons of filtered water, put it on the stove and stir to dissolve the sugar, then turn off the stove. Wait for the mixture to cool, then add 2 tablespoons of fresh lime juice and finely chopped chili peppers. You can use vinegar instead of lime juice.

Then mix all the ingredients with the shrimp. Gradually add the salad dressing according to your taste.

After mixing, transfer the salad to a plate and sprinkle roasted peanuts on top.
