Begin by seasoning the chicken inside and out with salt. Rinse and soak the black beans and shiitake mushrooms in water for about 1-2 hours to soften them. After soaking, remember to drain and set them aside. Cut the tomato into bite-sized pieces.
Preparing the Ingredients
Combine 1 teaspoon of chicken seasoning, ½ teaspoon of ginger, and chopped garlic to create a marinade for the chicken for about 30 minutes. Keep the chicken whole, avoiding any cuts. Use scallion to securely tie the chicken’s legs and wings, keeping it compact.
Place the marinated chicken and prepared ingredients into an earthenware pot. Add the 3 small bowls of chicken broth and simmer over low heat for approximately an hour. The earthenware pot is key to achieving the best flavor.
Note: Earthenware pots are superior to pressure cookers for this dish.
