Vietnamese cuisine is incredibly diverse and rich, with a variety of dishes made from insects. Today, we will introduce you to a specialty of the Northwest region that surprises many and is not for the faint-hearted.
1 What are Chit Larvae?
Chit larvae, also known as song larvae or thau larvae, are the caterpillars of the Brihaspa atrostigmella butterfly. This type of larvae is commonly found in the Midland and mountainous regions of Northern Vietnam, parasitizing on chit, le, and dot trees during the winter.
Chit larvae have a creamy yellow color, grow up to 3.5 cm in length, and are most abundant during winter. They bite into the tree trunks, causing the trees to stop growing. As winter ends and spring arrives, the trees will regenerate, resembling the phenomenon of cordyceps sinensis. These larvae are highly nutritious, and some even consider them the Vietnamese equivalent of bird’s nest soup.

The people of the Northwest region often catch these larvae in November and December by splitting the tree trunks. The number of larvae is lower during other months compared to these two winter months. Nowadays, some organizations in Vietnam also cultivate chit larvae with cordyceps sinensis for distribution in the market.
2 Price of Chit Larvae
Despite their unappetizing appearance, chit larvae have an irresistible flavor. Once cooked, they have a rich, buttery taste and a tender texture that leaves a lasting impression on those who dare to try them.
Fresh chit larvae are currently sold in the market for VND 160,000-180,000 per bundle of 100 larvae, while pre-separated larvae cost VND 950,000-1,100,000 per kg. Dried chit larvae are even more expensive, ranging from VND 3-4 million per kg.
