Ingredients:

3 gourd fruits, 150g pig liver, 4 garlic cloves, 1 tbsp cooking wine, salt to taste, 1 tbsp light soy sauce, 1 tbsp cornstarch, ground pepper.

Instructions:

Soak the pig liver in water to remove excess blood and reduce any strong flavor. Rinse and slice the liver thinly.

Marinate the liver with salt, light soy sauce, and cornstarch. Set aside for 10 minutes.

Peel and slice the gourd into bite-sized pieces. Finely chop the garlic.

Heat oil in a pot and sauté the garlic. Add the gourd and cook until it turns a beautiful emerald green.

Pour in boiling water and bring it to a boil. Add the marinated liver slices and skim any foam that forms on the surface. Season with ground pepper and simmer for about 3 minutes.
