– Step 1: Prepare the Fish

Next, make a syrup by adding 2 tablespoons of sugar and 2 tablespoons of water to a pot. Simmer over low heat until the sugar dissolves and the mixture turns a caramel color. There’s no need to stir; simply swirl the pot gently.

Now, add the fish to the pot along with the ginger, turmeric, chili, spring onion tops, green peppercorns, 1 tablespoon of fish sauce, and 1/2 tablespoon of ground pepper. Mix well and let the fish marinate for 20-30 minutes.

Place the marinated fish on the stove over medium heat and cook for about 5 minutes. Remember to turn the fish once during this time so that both sides cook evenly. Then, add about 300ml of boiling water, just enough to barely cover the fish. Reduce the heat, cover, and braise for 20 minutes.

During the braising process, gently turn the fish to ensure even flavor absorption. If the liquid in the pot reduces too much, feel free to add a little hot water. After 25-30 minutes of braising, taste and adjust the seasoning with fish sauce if needed. Then, turn off the heat and serve the fish on a plate, garnished with dill.
