Aloe vera leaves are quite slimy and slippery, making the preparation process quite tricky. If not prepared correctly, the aloe vera can turn bitter and lose its crispness.
Below is a simple, quick, and effective method to prepare aloe vera without the bitterness and with a crisp texture:
Step 1: Thoroughly wash and dry the aloe vera leaves.
Step 2: Place the leaf on a cutting board and use a knife to trim off the spiny edges. Create a slit along the leaf to facilitate easier separation.
Step 3: Using a kitchen spoon, press firmly along the bottom edge of the leaf, then gently lift to separate one side of the aloe vera flesh from the skin.
Step 4: Once one side of the flesh is separated, use a knife to make slits along the aloe vera flesh as shown.
Step 5: Continue using the kitchen spoon, repeating Step 3 to completely separate the flesh from the other side of the skin.
Step 6: Place the separated aloe vera flesh in a large bowl. Add the juice of half a lemon and half a teaspoon of salt. Mix well with your hands.
Step 7: Soak the prepared aloe vera in water for about 15 minutes, then remove and rinse thoroughly.
Step 8: Fill a pot with water and bring it to a boil. Briefly blanch the aloe vera in the boiling water. Immediately after, plunge the aloe vera into a bowl of ice-cold water to enhance its crispness.
