When buying grapefruits, you should not throw away the peel, but process it according to the following methods to get a delicious and refreshing throat treat:
1. Make dried grapefruit peel
Recently, dried grapefruit peel has been widely sold in the market and is an essential part of many types of granola. Thinly dried grapefruit peel is not bitter when eaten, it is fragrant and stimulates digestion.
Step 1: Prepare the grapefruit peel
You wash the grapefruit peel to remove any external dust. Peel the grapefruit skin to about 2mm thick. Soak the grapefruit peel in saltwater for 30 minutes to clean and remove bitterness.
Step 2: Blanch the grapefruit peel
Boil a pot of water, add the grapefruit peel to blanch for about 2 minutes to remove the bitterness in the grapefruit peel. Rinse with cold water and squeeze dry, the drier the better.
Step 3: Soak the grapefruit peel with sugar
You soak the grapefruit peel with sugar water, lime juice for about 3 hours (for making dried grapefruit peel, soak a small amount of sugar to add flavor to the grapefruit peel, not making soaked candy with a lot of sugar to coat the outside). 500g of grapefruit peel is soaked with about 100g of sugar, 100ml of lime juice.
Step 4: Proceed to dry/bake
If you have a dehydrator, use the dehydrator, or put it in the oven, air fryer for about 1 hour. Or you can sun dry the grapefruit peel until it is dry, then toast it in a pan. You can also use the refrigerator, dry the grapefruit peel about 70% and then put it in the refrigerator, the refrigerator will absorb to make the grapefruit peel even drier.
2. Make grapefruit peel jam
Step 1: Prepare grapefruit peel
Wash the grapefruit peel, soak it in saltwater to clean the dust, impurities. Cut the grapefruit peel into thick strands about 2mm
Step 2: Boil the grapefruit peel
Put the grapefruit peel into boiling water to reduce the bitterness. Squeeze it dry so that the grapefruit peel won’t leak. Do not boil it for too long, just boil it for 2 minutes, otherwise the grapefruit peel will become soft. Wash the grapefruit peel with clean water and then squeeze it to remove the bitterness from the grapefruit peel.
Step 3: Cook the grapefruit peel with sugar
Put the grapefruit peel in the pan, mix it with sugar and water. Usually, it’s 300g of sugar, with about 300g of grapefruit peel. The grapefruit peel and sugar dissolve into each other and then cook it.
You cook over medium heat until the sugar sticks to the grapefruit peel and turns white. The grapefruit peel becomes translucent and has a white layer of sugar on the outside without burning. Note to cook on low heat to evenly dry the jam and prevent it from burning. When you see the smooth white layer of sugar evenly attached to the surface of the grapefruit peel, you can turn off the heat.
Store the grapefruit peel jam in a glass jar with a tight lid in a well-ventilated place to avoid moisture.
