How to choose potatoes that are not squishy
Choosing the right potatoes is crucial for making delicious French fries.
Based on color
You need to observe the color and skin of the potatoes. You should choose potatoes with yellow, smooth skin. Avoid buying potatoes with white skin, wrinkles or black spots as they are not sweet, nutritious, and may be spoiled.
Weight
You can also judge the quality of potatoes based on their weight. Good potatoes feel firm and heavy when you hold them.
Avoid sprouted potatoes
You should avoid buying sprouted potatoes, potatoes with green skin and immature sprouts. At this stage, potatoes start to produce toxins that are harmful to health.
You can also lightly press the surface of the potatoes with your hand. If the potato feels firm and solid, it is fresh, nutritious, and can be stored for longer.
How to make crispy French fries
Ingredients
– Potatoes: 500g
– Cooking oil, chili sauce, salt, and ground pepper
Instructions
Step 1: Blanch the potatoes
– Peel and wash the potatoes, then cut them into thick, finger-sized strips and soak them in diluted saltwater to remove the starch and prevent discoloration.
– Bring a pot of salted water to a boil, then blanch the potatoes for 30 seconds to 1 minute and drain.
Step 2: Fry the potatoes
– First fry: Pour enough oil into a pan and heat it up (avoid overheating as the fries may burn), then fry the potatoes until they are slightly golden. Remove from the oil and let them drain. Once the potatoes are cooled, you can store them in the refrigerator until you’re ready to fry them a second time.
– Second fry: Take the refrigerated potatoes and fry them again. Heat the oil in a pan over medium heat and add the potatoes. After this step, the potatoes will be golden and crispy.
– After frying the potatoes, sprinkle them with a little bit of chili sauce and toss them evenly to add a spicy and aromatic flavor.
Traditional French fries are uniformly golden, retaining the fresh taste of potatoes, with a crispy and appetizing texture. When eating, you can enjoy them as they are or dip them in a bit of chili sauce for added flavor.
