Rice is the main source of starch in the Vietnamese diet. Most people eat rice every day in their family meals, and it is sometimes difficult to avoid cooking too much rice. If you know how to properly store cooked rice, you can maintain its quality and safety. Improper storage of cooked rice can not only affect its taste, but also be harmful to your health.

Properly Storing Cooked Rice

According to experts from the Japan Agricultural Cooperatives, storing cooked rice in the refrigerator improperly can result in a decrease in starch quality and a less desirable taste. They suggest the following proper method for storing cooked rice: First, cook the rice until it is fluffy, then let it cool and divide it into individual portions. Place the portions in a container with a tightly sealed lid or a ziplock bag and freeze them in the refrigerator.

Before eating, remove the container from the fridge and defrost the rice. Reheat it in the microwave for a fragrant and fluffy texture, just like normal. If there are any leftovers, absolutely do not store the rice for a second time, as reheating it again can lead to rice spoilage, loss of nutrients, and digestive problems.

The experts from the Japan Agricultural Cooperatives suggest that cooked rice can be stored in the refrigerator for 4-6 days after cooking, and up to 6 months in the freezer.

Some Tips for Storing Cooked Rice

– Store cooked rice in a clean and tightly sealed container or ziplock bag, and avoid letting it come into contact with salty foods.

– Absolutely do not store the rice for a second time.

– When serving the cooked rice, make sure to check if there are any signs of spoilage, mold, or anything unusual. If the rice does not have any strange odors, it can still be consumed as normal. However, if the rice appears abnormally sticky, it might be a sign of bacterial contamination, so it is best to discard it instead of consuming it.

– Rice that is too dry or hard should also not be kept for consumption, as its quality and taste have deteriorated.

Methods for Reheating Cooked Rice

– Reheat using an electric rice cooker: Using an electric rice cooker to reheat rice is the most convenient and popular method. However, if you only put the rice in the cooker without adding water, it will become dry.

To solve this problem, you can use a steaming tray: Place the cooked rice in a bowl and place it on the steaming tray. Pour a little water into the rice cooker, cover it, and press the “cook” button. Wait for a while until the rice cooker jumps back to its original position, and then you will have a bowl of warm and delicious rice. Alternatively, you can simply pour the cooked rice into the rice cooker, add a little water, press the “cook” button, and wait for about 5-10 minutes until the button pops up.

– Reheat using a microwave: To save even more time, you can reheat the cooked rice using a microwave. To prevent the rice from drying out, place a piece of ice on top of the rice in the bowl, cover it with plastic wrap, poke small holes in the wrap to allow steam to escape, and then adjust the microwave settings and start it.

Storing and freezing cooked rice can save time when you have multiple meals cooked at once or when you have leftover rice. However, you should only do this if you are truly busy and do not have enough time for cooking, or if you accidentally cook too much rice. In general, it is best to cook fresh rice daily for both its delicious taste and health benefits.
