However, when stewing trotters, many people make mistakes that make the trotters not tender and the finished product is tasteless. Here are some tips to help you cook this dish as delicious as a restaurant chef.

Step 1: Clean and chop the trotters into bite-sized pieces, then rinse again with clean water.

Step 2: Soak in white vinegar for about 20 minutes to remove any remaining secretions and gamey smell.

Step 3: Put enough water in a pot. After boiling over high heat, add the soaked trotters and blanch for about 3 minutes, then remove and set aside to drain.

Step 4: Add enough oil to the pot. When the oil is hot, add rock sugar and wait for the sugar to dissolve completely. Then add the trotters and stir-fry, adding a few slices of ginger to make the dish more fragrant.

Step 5: Add enough beer to the pot, along with star anise, cinnamon, bay leaves, dark soy sauce, scallions, and light soy sauce. After boiling over high heat, reduce to low heat and simmer for 80 minutes until the dish is completed.
