Soak the beans in saltwater

Add a teaspoon of salt to a bowl of hot water, stir until dissolved, and then soak the beans for about 30 minutes. The saltwater will reduce the moisture on the surface of the beans, while also helping the fried beans to have a vibrant yellow color. The high temperature of the water prevents the beans from becoming mushy, keeping the inside of the beans moist and flavorful. As a result, the fried beans will be crispy on the outside and soft on the inside.

Blanch the beans with boiling water

Another trick to make delicious fried beans is to cut the beans into small pieces, place them on a sieve, and blanch them in boiling water for about 20 seconds. This method helps the beans maintain their beautiful shape and firmness. You can add a bit of salt to the boiling water to enhance the effect.

Ensure the cleanliness of the pan

The pan must be clean to prevent sticking and breaking the beans. This is the most important thing among the tips for crispy and delicious fried beans. It is best to use a non-stick pan that is not scratched. You can pour some water into the pan, bring it to a boil, thoroughly clean it, and then pour out the water and let it dry.

Rub ginger on the pan

One of the important tips for making delicious fried beans is to rub the bottom and sides of the dry pan with a few slices of fresh ginger before adding oil to the pan. This method helps prevent sticking and ensures non-sticky frying.

Hot and sufficient oil

In the tips for crispy and delicious fried beans, you must not forget the principle of using hot and sufficient oil to deep-fry. This way, the beans will have a crispy golden crust and a soft interior. If you use too little oil, you will need to fry the beans for longer, resulting in dryness and excessive oil absorption.

After frying the beans until they are crispy and golden, take them out immediately and drain off the excess oil.

Don’t flip too soon

Fried tofu is very fragile, especially the good quality one, so when you put it in the pan, don’t flip it too soon. Wait until one side of the tofu is golden before flipping it.

How to make perfectly seasoned fried tofu

Fried tofu with seasoned oil is not only a delicious and easy dish for daily meals, but also a great option for casual gatherings.

Ingredients

  • 3 pieces of tofu
  • Spring onion, purple onion, chili
  • Seasonings: Fish sauce, sugar, ground pepper, cooking oil

Instructions

  • Wash the tofu thoroughly, cut into square or 1cm-thick pieces (depending on your preference); Wash the spring onion, finely chop; Peel the purple onion, slice it; Finely chop the chili.
  • Mix 3 tablespoons of fish sauce, 1 tablespoon of sugar, 1 teaspoon of ground pepper, 3 tablespoons of water, finely chopped spring onion, and chili (adjust the spiciness) in a bowl until well combined.
  • Heat the oil in a pan over high heat, then reduce to medium heat and fry the tofu until golden and crispy (pour enough oil to cover half of the tofu to achieve a crispy crust while keeping the inside soft). Transfer the tofu to absorbent paper to remove excess oil.
  • Remove some of the oil from the frying pan, sauté the sliced purple onion until golden and fragrant, then add the mixture from the bowl and bring to a boil (adjust the taste if necessary), stir well and let it simmer for about 10 seconds before turning off the heat.
  • Arrange the tofu on a plate, pour the onion sauce on top or pour the sauce into a separate bowl. When eating, dip the tofu in the onion sauce.
