Prepare the ingredients:

– 1 large white mushroom

– 1 onion

– 1 fried tofu

– Roasted peanuts

– 1 teaspoon of sesame oil

– 1 fresh red beet, make sure it’s fresh as the taste won’t be good if it’s not

– 3 grams of agar powder

– Vietnamese coriander, Vietnamese balm, Vietnamese mint, chili

– Soy sauce, vegetarian seasoning powder, and sugar

How to make vegetarian Tiết canh:

Step 1: Prepare the ingredients.

Dissolve the agar powder in filtered water.

Thinly slice the mushroom, tofu, and onion.

Roast the peanuts until fragrant and golden brown, then peel off the skin.

Peel and wash the beet. You can blend it and strain the juice or squeeze the beet to get the red juice. The amount of beet juice depends on how dark you want the Tiết canh to be. If you want it darker, increase the amount of beet juice. The purpose of the beet juice is to give the Tiết canh a red color, so adjust the amount accordingly.

Step 2: Prepare the filling.

Heat a pan, add cooking oil, and sauté the onion until fragrant. Add the mushroom and tofu and stir-fry quickly until cooked but not watery. Season with soy sauce, vegetarian seasoning powder, and a little sesame oil. Mix well.

Step 3: Cook the beet juice with agar powder.

Add the beet juice to the agar solution and mix well. Cook the mixture.

Step 4: Assemble the vegetarian Tiết canh.

Place the cooked filling in a bowl, add Vietnamese coriander, Vietnamese balm, Vietnamese mint, and chili. Pour the beet juice and agar mixture on top. Wait for it to set. Sprinkle roasted peanuts, Vietnamese coriander, and chili on top.

This vegetarian Tiết canh has a refreshing sweet taste from the beet, a crunchy texture from the mushroom and agar, a fragrant aroma from the herbs, and a nutty flavor from the roasted peanuts.
