This type of vegetable was once honored with the title ‘Emperor’s dish’, as it often appeared in meals at the palace. Chrysanthemum greens, also commonly known as tarragon, belong to the herbaceous plant category, usually growing straight and reaching an average height of 0.4 – 0.6m, with some plants reaching up to 1m.
The leaves of chrysanthemum greens are green, soft, and feather-like in shape, growing alternately. When they start to bloom, the outer edges of the flowers are a pale white, while the center is a bright yellow color and has a pleasant fragrance.
Consuming a lot of chrysanthemum greens brings many benefits to the liver and other internal organs. Chrysanthemum greens originated from the Mediterranean region and were later introduced to Europe and Asia. In Vietnam, chrysanthemum greens are grown extensively in the northern regions, while in the south, they are mainly cultivated in Lam Dong province.
Chrysanthemum greens are a rich source of nutrients such as vitamin K, protein, carotene, and various amino acids… which help improve sleep, protect the liver, enhance vision, cleanse the lungs, relieve constipation, lower blood pressure, protect the brain, nourish the heart, cleanse the blood…
With these benefits, chrysanthemum greens have been considered the “Emperor’s dish” since ancient times, as they are often favored and used in royal banquets.
