Sprinkle a little salt on the sliced watermelon rind and gently mix it to ensure the salt covers the entire surface. Set them aside and let them marinate for about 4 minutes, allowing the salt to penetrate the watermelon rind and produce some excess water that needs to be drained afterwards.

While waiting, take a green chili, cut it in half and remove the seeds, then cut it into small pieces. Crush and finely chop some garlic.

After 4 minutes, drain the water from the watermelon rind, making sure that the rind is dry. Heat up a pan on the stove and add about two tablespoons of cooking oil. Once the oil is hot, add the chopped garlic and chili to the pan, stir-fry quickly until the garlic becomes fragrant and the chili slightly softens.

Next, add the watermelon rind to the pan along with a tablespoon of vinegar, a tablespoon of sugar, and a little seasoning powder to create a balanced flavor. Stir-fry evenly over high heat for about 2 minutes, until the watermelon rind becomes soft and absorbs the flavors evenly.

Once done, turn off the heat and sprinkle some finely chopped green onions on top of the dish to enhance the aroma and attractive color. This stir-fried watermelon rind is not only unique with its crispy and sweet-sour taste, but also a creative and nutritious dish.

Bitter Melon Stir-Fry with Pork

Choose fresh bitter melons that are dark green in color and feel firm when touched, ensuring that they are not too ripe and the seeds are small, resulting in tender and tasty bitter melon when cooked. Rinse the bitter melons under cold water, let them drain, then cut off both ends. Slice the bitter melons into even thin slices, about 3-5mm thick, so they can cook evenly and quickly when stir-fried.

Next, finely chop the onions and garlic. There should be slightly more garlic than onions to create a rich flavor when stir-fried. Heat up a pan on the stove and add two tablespoons of cooking oil. Once the oil is hot, add the chopped onions and garlic to the pan and stir-fry quickly until fragrant and lightly golden.

After the onions and garlic are fragrant, gently add the bitter melon to the pan. Sprinkle a pinch of salt on top of the bitter melon and add a tablespoon of vinegar (adjust the amount according to taste) to create a slight sour taste that enhances the freshness of the bitter melon. Stir-fry quickly over high heat for about 2 minutes, constantly flipping to prevent the bitter melon from burning and to maintain its beautiful green color.
