After buying the beef tendon, shank, knuckle bone, and tripe, put them in a bowl and add salt, then soak for about 40 – 60 minutes. Then, take them out, rinse with clean water. Also, soak the beef fat with salt, rinse, and cut into small cubes.

Put a pot on the stove and add about 3 liters water, 1 tablespoon of salt, smashed ginger, some cilantro leaves, 1 tablespoon of rice wine. Then, add the beef shank, tendon, and tripe and blanch until the water boils, then take them all out and rinse with clean water.

After blanching and rinsing the beef, cut the tendon into small pieces of about 3-4 cm (depending on your preference).
