  • 500g beef tripe
  • 150g beef fat
  • 500g fresh wheat noodles
  • 500g Chinese radish
  • 500g scallions
  • 10g ginger
  • 5 stalks cilantro
  • 15g rock sugar
  • 15g salt
  • 5g star anise
  • 3g cinnamon stick
  • A few sprigs of Thai basil
  • 10g Sichuan peppercorns
  • Tian mian jiang (sweet bean sauce)
  • 30g chili bean paste
  • 70g fermented black beans
  • 50g dried chili peppers
  • 2 dried red peppers
  • Rice wine
  • 1 bag of spice mix
  • Brown sauce powder
  • Gourmet soy sauce

Step 1 Prepare the vegetables

Soak the Chinese radish in water for about 30 minutes, then cut into small pieces. Peel and wash the carrots and Chinese white cabbage, then cut into 1 cm sections. Peel the garlic and separate into small cloves. Soak the Thai basil in saltwater and rinse with clean water.

Step 2 Stir-fry the Chinese radish

Heat up a pan and stir-fry the Chinese radish. Then, season with 1 tablespoon of sugar, 1 teaspoon of chicken powder, and continue stir-frying for about 5 minutes before turning off the heat.

After buying the beef tendon, shank, knuckle bone, and tripe, put them in a bowl and add salt, then soak for about 40 – 60 minutes. Then, take them out, rinse with clean water. Also, soak the beef fat with salt, rinse, and cut into small cubes.

Step 4 Blanch the beef

Put a pot on the stove and add about 3 liters water, 1 tablespoon of salt, smashed ginger, some cilantro leaves, 1 tablespoon of rice wine. Then, add the beef shank, tendon, and tripe and blanch until the water boils, then take them all out and rinse with clean water.

Step 5 Marinate the beef tendon

After blanching and rinsing the beef, cut the tendon into small pieces of about 3-4 cm (depending on your preference). After cutting, put the tendon in a bowl and add 2 tablespoons of sweet bean sauce, 3 tablespoons of special non-salty soy sauce, then put it in the refrigerator to let the meat absorb the flavors.

Toast 10g of cinnamon, 5g of star anise, 3g of Thai basil, 10g Sichuan peppercorns, and 15g of fennel in a pan. Toast until they turn golden yellow.

Heat up a pan and add the diced beef fat. When the fat renders, add scallions, dried chili peppers, ginger, and garlic to saute. When everything turns golden, remove the ingredients from the pan.

Using the same pan, stir-fry the marinated beef. Add the beef to the pan and stir-fry for about 2 minutes, then add 2 tablespoons of rice wine and continue stir-frying for 5-10 minutes. Remove the beef from the pan.

Prepare a large pot and add about 6 liters of water. Add the beef knuckle bone, shank, and tripe and cook for about 30-45 minutes (simmer on low heat). After cooking the broth for about 45 minutes, add the stir-fried beef and the spices into the pot.

Next, add seasoning such as 40g of salt, 40g of brown sugar to the broth (simmer on low heat). Then remove the beef knuckle bone and tripe and cut them into bite-sized pieces.

After cooking for about 30 minutes, the beef tendon should be tender, remove it as well as the spice bags. Add more water to the broth and then add the carrots and Chinese radish. Season with 3 tablespoons of brown sauce, 20g of salt, 2 tablespoons of chicken powder, and cook until the broth boils to complete the broth.

Bring a pot of water to a boil, then add the noodles and cook. When the noodles are soft, remove them and rinse with cold water.
