Wrapping gio and cha with banana leaves is the most traditional and complex method among these 3 ways. However, complex doesn’t mean impossible to do, let’s see the instructions.
Arrange about 3 pieces of banana leaves on a flat surface, then place the gio and cha on them and use a spoon to shape and roll the filling to make it compact and beautiful.
Place the filling on the banana leaves
Roll the filling into a cylindrical shape, while rolling it tightly. Then, fold one end and stand the sausage up. Fold the ends of the banana leaves together, fold the sides like wrapping a gift. Afterwards, twist the sausage in such a way that the folded end does not come loose.
Compact the sausage and fold the end part of the banana leaves the same way as above.
Roll the filling
Use a long piece of nylon string, tie it vertically around the sausage, tighten it and tie a knot. Then, pull the string down 1/3 of the sausage, hold one end with your finger, wrap the string once, and hook it into the place where the string is being held to form a cross shape as shown in the picture.
Tie with string
Continue wrapping 2 more rounds as above. With the remaining string, tie the sausage lengthwise once more and tie a knot.

If you find the string tying step too complicated for a clumsy person like you, try this method, it will be much easier.
Instead of using banana leaves, you will use food wrap to wrap the filling.
3 Using plastic bottles to wrap gio thu

Here is a more creative way when you can’t find banana leaves but have plenty of plastic bottles at home.
You just need to cut off the small neck of the bottle, then put the filling in and press it firmly and place a chopping board or a heavy object on top. Note that this method is only applicable for gio thu!
