Locals claim that gio trung, a unique delicacy, originates from Non Khe village in Yen Mo district, Ninh Binh province. The creativity and essence of this dish lie in the combination of familiar pork sausage and chicken eggs, enhancing its nutritional value and reducing its greasiness compared to regular pork sausage.

Ms. Thuong, a 40-year-old resident of Non Khe village, shared: “I don’t know when gio trung was first made, but I learned the recipe from my grandparents. This dish is a must-have during festivals, ancestral worship, and weddings. Although we eat gio trung all year round, it is most popular during the cold season, especially during the Lunar New Year.”

According to Ms. Thuong, the ingredients for gio trung include ground pork, bacon, and chicken eggs. Each layer of meat is alternated with a layer of eggs, along with a few slices of bacon, creating a harmonious and compact combination.

“The arrangement of ingredients is crucial to the aesthetic appeal of gio trung. Depending on personal preference and the size of the sausage, we use about 10 to 16 eggs per sausage,” added Ms. Thuong.

While gio trung used to be a rustic dish in Ninh Binh, it has now become a sought-after delicacy among city dwellers. Online markets offer various options for purchasing Ninh Binh gio trung at a price of 180,000 VND/kg. Out of curiosity, many people have placed orders to try this unique dish.

The skill of the chef in arranging the ingredients determines the beauty of the final gio trung dish.

Ms. Ngoc Anh, a Ninh Binh specialty seller in Cau Giay, Hanoi, shared: “I get my supply from my parents in Ninh Binh and sell it in the apartment complex market. There are two types of gio trung: boiled and stir-fried, but the boiled version is more common and preferred. Preparing this dish is simple and straightforward, similar to making other types of pork sausage.”

“Initially, I had few customers, but word-of-mouth recommendations gradually increased demand. Now, I source my inventory weekly, and during holidays and festivals, I sell more frequently,” she added.

Gio trung is widely sold online at a price of approximately 180,000 VND/kg.

Ms. Ngoc Anh mentioned that in her hometown, many households specialize in making gio trung for the market. After preparation, the sausages are carefully packaged and shipped to different provinces and cities.

When purchasing gio trung online, it is essential to choose reputable sellers to ensure the freshness and quality of the product. Gio trung can be stored for 4-6 days in the refrigerator and up to 10 days in the freezer.
