Step 1 Prepare the chicken

First, wash the chicken thoroughly with salt and water. You can mix vinegar and salt to apply evenly on the chicken and then rinse it off to remove any odor, and let it drain.

Step 3 Marinate the chicken

Before marinating the chicken, lightly score the skin to help the chicken absorb the seasoning. Marinate the chicken both inside and outside with 2 teaspoons of salt, 1 tablespoon of sugar, 1/2 teaspoon of MSG, and 1/2 teaspoon of ground pepper.

Next, mix 1 tablespoon of oyster sauce, 1/2 teaspoon of sesame oil, and 1 tablespoon of sautéed shallots and garlic. Marinate the chicken thoroughly both inside and outside.

Wash the Vietnamese mint, cut into small pieces. Peel and julienne the ginger. Peel the shallots and cut into strips. Soak the wood ear mushrooms, rinse them thoroughly, and cut into strips.

Take 1/2 of the Vietnamese mint, 1/2 of the shallots, wood ear mushrooms, ginger and mix well with the sautéed shallots and garlic. Season with 1 teaspoon of ground pepper, 1 teaspoon of sugar, 1/4 teaspoon of MSG, 1/2 teaspoon of sesame oil, 1 teaspoon of seasoning powder, and 1 teaspoon of oyster sauce.

Step 5 Steam the chicken

Pour the prepared seasoning mixture into the chicken’s cavity. Let the chicken marinate for about 30 minutes. Then, place the chicken on a plate and place it in the steamer. Steam the chicken for about 1 hour until it is fully cooked.
