Step 1 Prepare the beef

Trim the beef ribs into small bite-sized pieces. Soak the ribs and beef tendon in a mixture of salted vinegar and ginger for about 15 minutes to remove any unpleasant odor. Rinse with water.

Bring a pot of hot water, ginger, and crushed shallots to a boil. Add the beef ribs and tendon to the pot. Season with 1 tablespoon of salt, 3 pieces of rock sugar, and 5 crushed lemongrass stalks. Simmer for about 30 – 60 minutes until the beef is tender.

Tip: To keep the broth clear, remember to skim off any impurities during the simmering process.

In a separate pot, add 4 tablespoons of sesame oil, 3 tablespoons of minced chili, 2 tablespoons of minced garlic, and 2 small minced lemongrass stalks. Stir well and simmer for about 10 minutes. Turn off the heat.

Step 4 Cook the broth

Bring another pot to a boil. Add 400ml of filtered water and 1 tablespoon of fermented shrimp paste. Stir well and bring to a boil. Remove the beef tendon from the pot and slice it thinly.

Next, add the cooked fermented shrimp paste mixture to the broth. Season with 1 teaspoon of seasoning powder and 1/3 teaspoon of MSG. Adjust the seasoning to taste and turn off the heat.

Step 5 Cook the marinade sauce for the beef

In a small pot, add 1 tablespoon of chili sa te, 1 tablespoon of fermented shrimp paste, 1 teaspoon of sugar, 1 teaspoon of chicken seasoning powder, and 250ml of the cooked broth. Season to taste. Marinate the sliced beef tendon and remove.

Step 6 Finishing touches

Blanch the rice noodles in boiling water with a little fermented shrimp paste for a richer flavor. Place the noodles in a bowl, top with fresh herbs, beef, a spoonful of marinade sauce, sa te, and fried shallots. Serve with a side of broth garnished with cilantro.
