During the winter, Hanoi people come to hot snack stalls to dispel the cold. Located on Nguyen Khac Can Street, right next to the gate of Trần Phú High School, about 500 meters from Hoan Kiem Lake, the cassava tea stall of Mrs. Ho Thi Thuy is a familiar address loved by many people.

The stall is located on the right corner of the gate of Trần Phú High School, on the sidewalk. There is no roof, no sign, the stall is only recognized by a small charcoal stove, enclosed by a thin sheet of metal. On the stove is a boiling pot of water, and inside is a tray of cassava tea, kept hot by boiling water.

To cook cassava tea, Mrs. Thuy prepares early. After peeling, the fresh cassava is soaked in water for about 2-3 hours to remove the starch. Then, the cassava is washed and boiled with water and a little salt until it is cooked, then sliced into bite-sized pieces.

The cassava tea is cooked from a mixture of water and apricot blossom sugar. When the water boils, the sugar dissolves completely, Mrs. Thuy adds the sliced cassava and boils for about 4-5 minutes. Finally, she mixes cassava flour with water and gradually pours it into the pot, stirring evenly until the tea pot becomes sticky and thick.

In the summer, Mrs. Thuy sells cold desserts such as black bean soup, mung bean soup, and lotus seed soup to cool down. In the winter, she switches to selling hot cassava tea, black bean soup, and hot cassava tea.
