Firstly, ensure that you purchase fresh tofu, preferably one that’s made on the same day for easier preservation. If the surface of the tofu doesn’t have many water droplets, you can wrap it gently with a clean paper towel to absorb the excess moisture.
Step 2: Soak Tofu in a Mild Salt Water Solution
Place the tofu in a clean container and add enough mild salt water. The water should be slightly salty to inhibit bacterial growth. Soak the tofu for about 10 minutes to allow it to absorb the water.
Step 3: Air-dry and Store in an Airtight Container
After soaking, gently pat the tofu dry with a clean paper towel. Place the tofu in an airtight food container, lining the bottom with a layer of paper towels to absorb any excess water.
Next, cover the tofu with another layer of paper towels to absorb moisture during storage. Finally, seal the container tightly to prevent air from getting in.
Step 4: Store in a Cool, Dry Place
This is the most crucial step. Keep the sealed container of tofu in a cool, dry place, away from direct sunlight. The ideal storage temperature is between 15-20°C, which prevents early spoilage and freezing of the tofu.

During storage, check the tofu daily. If the paper towels become damp or discolored, replace them with fresh, dry ones. This will help extend the shelf life of the tofu in a dry environment.
