Ingredients:
300g good quality sticky rice
200g fresh cassava (about 1 medium-sized root)
100g grated coconut
2 tablespoons of sugar
½ teaspoon of salt
1 tablespoon of chicken fat or cooking oil
Pandan leaves (optional, for added fragrance)
Instructions:
1. Prepare the ingredients:
Rinse the sticky rice and soak it in cold water for about 6-8 hours or overnight. Then, rinse again and drain.
Peel and cut the cassava into small pieces. Soak them in a dilute salt solution for 1-2 hours to remove any toxins. Rinse and chop into small cubes.
Mix the grated coconut with 2 tablespoons of sugar to enhance its natural sweetness.
2. Steam the cassava and sticky rice:
Line a steamer basket with pandan leaves (if using) to infuse their fragrance.
Combine the sticky rice, cassava, and ½ teaspoon of salt. Transfer the mixture into the steamer basket.
Steam for about 30-40 minutes over medium heat, occasionally fluffing the rice gently to ensure even cooking.
Once the rice is cooked, drizzle the chicken fat or oil over it and fluff gently to create a shiny, moist texture.
Add the sweetened grated coconut to the rice and mix well. Steam for an additional 5 minutes to allow the flavors to meld.
Final Product:
The finished dish will have a creamy ivory color and a delightful aroma from the rice, pandan leaves, and coconut. The cassava will be soft, blending seamlessly with the sticky rice, and the sweetness of the coconut will round out the dish perfectly.
Enjoy this sticky rice with cassava and coconut for breakfast or as an afternoon snack. For an extra touch of flavor, sprinkle some toasted sesame seeds on top.
Good luck, and I hope you enjoy this delicious treat!
