Ingredients:
– 3 kg of mangoes.
– 2 pineapples.
– 2 kg of sugar.
Instructions:
Step 1: Selecting Mangoes:
– Look for mangoes with fresh stems and leaves. The ideal fruit should be round, plump, smooth, and free from bruises or worm holes.
– Ripe mangoes will have a white powdery substance on their skin. They should feel slightly soft when gently squeezed but not too mushy.
– The best-tasting mangoes are usually a mix of red and green, offering a perfect balance of sweetness and crispness.
– Avoid mangoes that are too green or overly ripe. Green mangoes tend to be sour, while very ripe ones may have lost their crisp texture.
Step 2: Preparation:
Wash and peel the mangoes, then remove the seeds by cutting or slicing them.
For the pineapples, peel and chop one into small cubes, and blend the other until smooth.
Step 3: Marinating:
In a large container, combine the mangoes, both prepared pineapples, and sugar. Mix well to ensure even coating.
Note: If you’re making a smaller batch, simply adjust the ingredient quantities proportionally.
Cover and refrigerate the mixture overnight to allow the sugar to dissolve completely.
Step 4: Cooking:
Transfer the marinated fruit to a pot and cook over low heat for about 20 minutes. Skim off any foam that forms on the surface.
Once cooked, separate the mango jam and syrup into different containers. If you’re short on time, you can skip the filtering step and directly store the syrup in sterilized glass jars in the refrigerator.
Note: With this recipe, you won’t need to add extra sugar when mixing the syrup with tea.
Step 5: Mango Tea:
To elevate your tea experience, consider garnishing it with mango cubes marinated in sugar. Here’s how to prepare your mango tea:
Combine 80ml of tea, one calamansi (or calamondin), 50ml of mango syrup, ice cubes, mango jam, coconut jelly, and a few marinated mango cubes. Stir well and enjoy!
There you have it! A refreshing and delicious mango tea that’s perfect for the summer. Enjoy, and feel free to adjust the recipe to your taste.
