1. WATERCRESS AND SHRIMP SOUP

Ingredients:

– 200g fresh shrimp (or 50g dried shrimp, according to preference)

– 1 bunch of watercress

– 1 shallot

– Seasonings: salt, pepper, fish sauce, cooking oil.

Instructions:

Step 1: Preparation

– Rinse the shrimp, peel and devein them. Marinate with pepper and fish sauce for extra flavor.

– Pick over the watercress, discarding any tough stems. Rinse and set aside to drain.

– Finely chop the shallot.

Step 2: Cooking the Soup

– Sauté the shallot in oil until fragrant, then add the shrimp and stir-fry until they change color.

– Pour in about 1 liter of water and bring it to a boil. Skim off any foam that forms.

– Once it boils, add the watercress and season to taste.

– Simmer for another 1-2 minutes until the vegetables are tender.

Serving:

Ladle the soup into a bowl and sprinkle with ground pepper to enhance the aroma.

2. STIR-FRIED WATERCRESS WITH BEEF

Ingredients:

– Watercress: 300g.

– Beef: 100g.

– 1 onion, 60g minced garlic.

– Seasonings: cooking oil, sesame oil, oyster sauce, sugar, salt, seasoning powder, pepper.

Instructions:

Step 1: Preparation

Rinse the beef and slice it thinly. Pick over and rinse the watercress. Cut the onion into wedges.

Step 2: Marinate the Beef

Marinate the beef with sesame oil, oyster sauce, garlic, sugar, seasoning powder, and pepper for 10-15 minutes.

Step 3: Stir-fry the Beef

Sauté the garlic in oil, then add the beef and stir-fry over high heat. Once the meat is no longer pink, add the onion and give it a quick toss before transferring to a plate.

Step 4: Stir-fry the Watercress

Using the same pan, add more oil and garlic. Quickly stir-fry the watercress and adjust the seasoning.

When the vegetables are almost done, return the beef to the pan and cook for another 1-2 minutes before turning off the heat.
