According to Mr. Nguyen Xuan Kien (49 years old), the owner of the restaurant, he has been selling grilled chicken noodle soup for 8 months. However, in the past 3 months, some young customers have come to experience and share pictures on social media, and the new dish has become known to many people.
Kien’s mixed chicken grilled noodle soup restaurant has a relatively spacious space with about 14 tables inside and 4 tables outside, and can serve about 30 customers at the same time.

In the heart of Hanoi, the mixed chicken grilled noodle soup of Mr. Xuan Kien stands out as a delicious and unique dish with a very affordable price.
For the chicken dish, the restaurant uses chickens from Yen The hill (Bac Giang) that are raised for about 5 months, weighing about 1.7 kg – 1.8 kg, with firm meat. Kien shared that although industrial chickens are cheap, their meat is not delicious.
First of all, the chicken is thoroughly cleaned, then lightly blanched with boiling water to remove impurities. Next, the whole chicken is marinated with a mixture of 17 spices such as black pepper, Korean chili powder, sugar… The secret to creating a special flavor for the dish is to use Thai salt. According to Kien, if you accidentally use too much Thai salt, the dish will be only rich in flavor and not salty like other types of salt.
Every day at about 3am, the chickens are transported from Bac Giang to Hanoi. After being cleaned and thoroughly washed, the chickens will be “bathed” in a boiling mixture of vinegar and ginger to eliminate odors, helping the chicken skin become evenly tight, shiny, and smooth.
Then, the chicken is marinated in a mixture of vinegar, honey, and mixed until the sauce becomes viscous and slowly poured to ensure that the sauce sticks and permeates evenly into the chicken.
Finally, the chicken is grilled in a lu at a temperature of 200°C for about 15-20 minutes. The finished chicken is evenly cooked, with golden crispy skin and a delicious aroma.

In 1999, Mr. Xuan Kien worked as a chef in a hotel in Dong Da district, Hanoi. By 2009, he resigned and opened a boiled chicken noodle soup restaurant at the current address. At that time, he started selling grilled chicken noodle soup, but because he had not found the right recipe, the dish was not truly outstanding.
After enjoying the special grilled duck noodle soup in his wife’s hometown in Lang Son, Kien came up with the idea of combining grilled chicken and noodle soup to create a unique dish that brings a new and appetizing taste to customers. Around the beginning of 2023, he added grilled chicken noodle soup to the menu.
“At first, the flavor of the dish was not stable, and I didn’t know how to cook it to keep the chicken skin crispy for a long time. I had to experiment and create for nearly three years to have the complete dish as it is now“, Kien reminisced.
