Stir-fried Enoki Mushrooms with Eggs
Preparation:
50gr Enoki Mushrooms
2 Duck Eggs
½ Carrot
50gr Green Beans
2 Spring Onions
2 teaspoons Ground Pepper
2 tablespoons Fish Sauce
1 tablespoon Cooking Oil
Instructions:
+ Prepare the ingredients: Cut off the roots of the enoki mushrooms and soak them in a brine solution to clean. Wash, peel, and dice the carrot and green beans.
+ Finely chop the enoki mushrooms. In a bowl, beat the eggs and add the fish sauce, ground pepper, and a pinch of salt. Whisk well.
+ Heat the cooking oil in a pan and add the chopped spring onion. Sauté until fragrant.
+ Put the green beans, enoki mushrooms, and carrots in the pan. Add a little water and stir well. Pour the egg mixture into the pan and scramble it with the vegetables.
+ Keep stirring until the eggs are cooked and the vegetables are tender. Sprinkle some ground pepper on top and serve hot with steamed rice.
Beef Rolls with Enoki Mushrooms
Preparation:
300g beef
300g enoki mushrooms
Ginger, garlic
Seasonings: Salt, soy sauce, seasoning powder, oyster sauce
Instructions:
+ In a bowl, mix 2 tablespoons of soy sauce, 2 tablespoons of rice wine, and a pinch of sugar. Stir well and set aside.
+ Dissolve ½ teaspoon of salt in a bowl of water. Clean the enoki mushrooms and soak them in the salted water for about 5 minutes. Then, rinse them in cold water and set them aside to drain.
+ Place the beef slices on a cutting board and lay the enoki mushrooms on top. Roll the beef tightly around the mushrooms.
+ Heat some cooking oil in a pan and sear the beef rolls. Sprinkle salt and pepper on top.
+ When the beef is almost cooked, brush the soy sauce mixture on top and cook for another minute. Turn off the heat and serve.
Stir-fried Enoki Mushrooms with Tomatoes and Pork
Preparation:
300gr Enoki Mushrooms
150gr Minced Pork
1 Tomato
1 Bell Pepper
½ Ginger Root
2 Garlic Cloves
2 Chili Peppers
1 teaspoon White Sugar
1 teaspoon Turmeric Powder
1 teaspoon Black Bean Sauce
Instructions:
+ Prepare the enoki mushrooms by cutting off the roots and cleaning them. Blanch the tomato and peel the skin, then chop it finely. Mince the garlic and ginger, and slice the bell pepper and chili peppers.
+ Heat some cooking oil in a pan and add the bell pepper, chili peppers, garlic, and ginger. Sauté for about 2 minutes until fragrant.
+ Add 1 teaspoon of sugar, 1 teaspoon of turmeric powder, and ½ teaspoon of black bean sauce to the pan. Stir well.
+ Put the enoki mushrooms and minced pork in the pan and continue stirring for about 5 minutes. Turn off the heat and serve.

Ingredients:
- 400gr Enoki Mushrooms
- 15g Butter
- 20g Garlic, minced
- 5g Spring Onion, chopped
- Seasonings: Sugar, Fish Sauce, MSG, Oyster Sauce

Clean the enoki mushrooms by cutting off the roots and separating the mushrooms. Rinse them thoroughly.

Then, add the enoki mushrooms and season with 1 teaspoon of seasoning powder and 2 teaspoons of satay sauce. Continue cooking for about 2 minutes. Finally, add the spring onions and stir well. Turn off the heat and serve hot.
