Ingredients for Thịt kho tàu

500 gr pork belly

5 boiled duck eggs

400 ml coconut water

1 tablespoon minced spring onions

1 tablespoon minced garlic

3 tablespoons fish sauce

How to make delicious Thịt kho tàu

Step 1: Prepare the pork

First, clean the pork and the ingredients for Thịt kho tàu and let them dry. For the duck eggs, you should also clean the shells and boil them until they are cooked. After the eggs are cooked, peel off the shells.

Step 2: Marinate the pork

After buying pork belly or pork leg, wash it with salt water, let it dry, then cut into medium-sized pieces and put them in a bowl. Choose pork with thin skin for a tastier and softer dish.

Add 1 tablespoon of minced spring onions, 1 tablespoon of minced garlic, 3 tablespoons of fish sauce, 2 tablespoons of sugar, 1/3 tablespoon of seasoning powder, and 1 teaspoon of black pepper to the bowl. Mix well. Use plastic wrap to cover the bowl and marinate the pork for at least 1 hour for the flavors to penetrate the meat.

Step 3: Make dark caramel sauce

Place a pot on the stove, add 1 teaspoon of sugar to the pot, and heat it over medium heat. At the same time, use a spoon to stir until the sugar turns into dark brown color. Turn off the heat. Wait for the caramel to cool down, and then add 1/2 cup of filtered water to dilute the caramel.

Step 4: Cook the pork

Place the marinated pork into the pot with the caramel sauce, stir-fry with high heat until the pork becomes firm, then add 400ml of coconut water to the pot.

Cover the pot and simmer the pork with low heat for 30 minutes. After 30 minutes, if the liquid is nearly dried, add more water and put 5 peeled boiled duck eggs into the pot. Cover the pot and continue cooking for another 30 minutes until the pork is tender. Then turn off the heat.

Step 5: Finished dish

Once you see that your Thịt kho tàu is tender and cooked, it is ready to serve hot. The dish has a beautiful dark brown color and a rich and attractive flavor. The tender pork combined with the delicious duck eggs will make a perfect meal!

Frequently asked questions

Adding soda to your braised pork recipe can help tenderize the meat and add flavor. The acidity of the soda breaks down the tough connective tissues in the pork, resulting in tender and juicy meat. Additionally, the sugar in the soda can help to create a delicious caramelization on the surface of the pork, adding to the overall flavor and appearance of the dish.

You can use any type of soda that you like, but some popular options include cola, root beer, or even lemon-lime soda. Each type of soda will add its unique flavor to the dish, so feel free to experiment to find your favorite.

The amount of soda you use will depend on the size of your pork roast and your personal preference. As a general guideline, you can use anywhere from 1/2 cup to 2 cups of soda for a typical-sized pork roast. Adjust the amount to your taste and the desired level of tenderness.

When using soda in your braised pork recipe, you may want to reduce the amount of salt you add, as soda already contains a significant amount of sodium. Additionally, you can consider adding some spices or herbs to enhance the flavor, such as garlic, onion, thyme, or rosemary.

It is not recommended to use diet soda for braising pork. The artificial sweeteners in diet soda may not provide the same tenderizing and flavor-enhancing effects as regular soda. Stick to regular soda for the best results.
