Ingredients for Salmon with Passion Fruit Sauce
– 300g salmon
– 6 passion fruits
– 100g asparagus
– 10g garlic, cornstarch
Seasonings: Salt, seasoning powder, sugar, pepper, cooking oil, white wine
How to Make Salmon with Passion Fruit Sauce
Step 1: Prepare the Ingredients
Place the salmon in a bowl and add 1 tablespoon of salt and 1 tablespoon of white wine. Rub the salt and wine evenly over the salmon and let it sit for about 2 minutes. Then, rinse the fish with clean water and pat it dry.
Note: If you want the fish to dry faster, gently blot it with a paper towel. Cut off the tough ends of the asparagus and only use the tender tops. Rinse them thoroughly. Peel and finely chop the garlic cloves, keeping 3 cloves separate to be crushed and sautéed.
For the passion fruit, cut them in half and scoop out the pulp. Strain the pulp through a sieve to collect the juice, discarding the seeds. You can keep a few seeds aside for garnishing if desired. Once you have the passion fruit juice, add 3 tablespoons of sugar and 1/2 teaspoon of salt, stirring well. In a separate bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water until the cornstarch is fully dissolved.
Step 2: Marinate the Salmon
Marinate the salmon for 15-20 minutes. Place the fish in a bowl and season it with 1/4 teaspoon of pepper, 1/2 teaspoon of cooking oil, and 1/2 teaspoon of salt. Rub the seasonings evenly over the salmon and let it marinate for 15-20 minutes to absorb the flavors.
Step 3: Sauté the Asparagus
Heat a pan over the stove and add 1 tablespoon of cooking oil. Once the oil is hot, add the crushed garlic and sauté until fragrant. Then, add the asparagus and sauté for about 2-3 minutes until tender. Remove the asparagus from the pan and set it aside on a plate.
Step 4: Make the Passion Fruit Sauce
Pour the passion fruit juice into a pot and place it over the stove. Bring the juice to a boil and then add the cornstarch mixture, stirring continuously. Cook over low heat until the sauce thickens slightly, then turn off the heat.
Step 5: Pan-fry the Salmon
Heat a pan over the stove and add 2 tablespoons of cooking oil. Once the oil is hot, add the remaining garlic cloves. Then, place the salmon in the pan and cook until it is golden brown on both sides.
Note: Adding the garlic to the pan while frying the salmon will enhance the flavor of the oil and help reduce any fishy smell.
Step 6: Plate the Dish
Arrange the asparagus on a serving plate and place the pan-fried salmon on top. Finally, drizzle the passion fruit sauce over the salmon and serve.
Step 7: Enjoy Your Delicious Creation
The Salmon with Passion Fruit Sauce is now ready to be enjoyed! The salmon should be tender and flaky, with a delightful combination of sweet and sour flavors from the passion fruit sauce. The asparagus adds a nice crunchy texture to the dish.
